Homemade Carrot Cake from scratch (Eggless or Not) കാരറ്റ് കേക്ക്

Homemade Carrot Cake from scratch  (3)
INGREDIENTS:
  • All-purpose Flour (Maida) – 2 cups (300g)
  • Carrots – 2 cups (300g), finely shredded
  • Baking Powder – 1 tsp.
  • Baking Soda – 1 tsp.
  • Cinnamon powder – 1 to 2 tsp. (your preference)
  • Nutmeg powder – 1/4 tsp..
  • Yogurt – 1 cup
  • Brown Sugar – 1/2 cup
  • Sugar – 1 cup
  • Vanilla essence  -1 tsp..
  • Almonds  – 1/2 cup, roughly ground or very finely chopped.
  • Butter – 1 stick (4oz), melted (If using unsalted butter, add 1/2 tsp. salt to flour)
  • Eggs – 2 nos.
  • For eggless cake :  Mix 2 Tbsp. Flaxseed Powder with 6 Tbsp. warm water (allow it to sit for 10 minutes)

    METHOD:
  • Allow eggs to stand at room temperature for 30 minutes. Meanwhile, Grease and flour two 8" or 9" round cake pans. Keep it aside.
  • Using a food processor, grind 1/2 cup of the almonds. Transfer to a bowl  and set  it  aside.
  • Preheat Oven to 350 degrees F or 180 C.
  • In a mixing bowl, sift together  All-purpose Flour, Baking Soda, Baking Powder, Cinnamon Powder and Nutmeg Powder. Mix everything well.
  • In another large mixing bowl with a handheld or stand mixer on medium speed, combine the brown sugar and melted butter. Now add white sugar and beat well. Beat in the yogurt until fully combined about 60 seconds. Mixture will be gritty and thick. Mix until sugar dissolves. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla.
  • Add Flour and whisk until a smooth batter is formed.
  • Add Carrots and mix well. Fold in finely chopped or ground almonds. Mix everything well.
  • Lightly butter the bottoms and sides of 2 cake pans and dust with flour.
  • Evenly divide the batter into the 2 cake pans and smooth the top.
  • Bake for 30 – 40 minutes or until a cake tester inserted into the middles comes out clean.
  • Remove from Oven and allow the cakes to cool in the pan for 10 minutes.
  • Allow them to cool completely before frosting. If you do not wish to frost the cake, you can enjoy it immediately.

    Perfect Carrot Cake Tips:
  • Grate your own fresh carrots. Grate them pretty fine.
  • If your carrots are not shredded fine enough, they may sink to the bottom of your cake when baking.

    • കാരറ്റ് ഗ്രേറ്റ്‌ ചെയ്‌തത്‌ - 2  കപ്പ്  (കാരറ്റ് വളരെ ചെറുതായി കിട്ടുന്നതിനു ഗ്രേറ്റ്‌ ചെയ്തതിനു ശേഷം മിക്സിയിൽ ഇട്ടു അടിച്ചെടുക്കുക)
    • പൊടിച്ച കറുവ പട്ട  - ഒരു ടീസ്​പൂണ്‍
    • ജാതിക്കാ പൊടിച്ചത് - 1/2  ടീസ്​പൂണ്‍
    • മൈദ  -  2 കപ്പ്
    • സോഡാ പൊടി – അര ടീസ്പൂണ്‍
    • ചെറുതായി നുറുക്കിയ അണ്ടിപ്പരിപ്പ് അല്ലെങ്കിൽ ബദാം -  1/2  കപ്പ്
    • മുട്ട  - 2  എണ്ണം 
    • ഉപ്പ്   -  കാൽ  ടീസ്​പൂണ്
    • പഞ്ചസാര പൊടിച്ചത്  - ഒന്നര കപ്പ്
    • വെണ്ണ - 1 കപ്പ്
    • ഏലയ്ക്ക പൊടി - 1/8  ടീസ്​പൂണ്‍ അല്ലെങ്കിൽ വാനില എസ്സന്സ് -  1 tsp

    പാകം ചെയ്യുന്ന വിധം
    1. മൈദ അരിച്ചെടുക്കുക.
    2. അതിൽ സോഡാ പൊടി, ജാതിക്കാപ്പൊടി, പൊടിച്ച കറുവ പട്ട  , ഉപ്പ് ഇവ ചേര്‍ത്തിളക്കുക.
    3. ഒരു വലിയ ബൌളിൽ  മുട്ട പൊട്ടിച്ചു ഒഴിച്ച് നന്നായി പതപ്പിക്കുക,അതിലേക്കു പഞ്ചസാര ചേര്‍ത്ത് നന്നായി അടിച്ചു യോജിപ്പിക്കുക.പഞ്ചസാര നന്നായി യോജിച്ച ശേഷം മൈദ മിശ്രിതം  കുറേശ്ശയായി ചേര്‍ത്ത് വീണ്ടും ഇളക്കുക.ഇതില്‍ വെണ്ണ  ചേര്‍ത്തു നന്നായി യോജിപ്പിക്കുക  ചെയ്യുക. സ്ക്രെപ്‌ ചെയ്ത കാരറ്റ്‌ ഈ കൂട്ടിലേക്ക് ചേര്‍ത്തു യോജിപ്പിക്കുക.അവസാനമായി ചെറുതായി നുറുക്കിയ അണ്ടിപ്പരിപ്പ് അല്ലെങ്കിൽ ബദാം ചേര്ക്കുക.  ഏലക്ക പൊടിയും  ചേർത്ത് ഇളക്കി യോജിപ്പിക്കുക.  കാരറ്റ് കേക്ക് ബാറ്റെർ തയ്യാർ.
    4. ഇനി എണ്ണയോ വെണ്ണയോ പുരട്ടി മയം വരുത്തിയ ബേക്കിംഗ് ട്രേയിലേക്ക് കേക്കിന്റെ കൂട്ട് പകരുക. പ്രീ ഹീറ്റ് ചെയ്ത ഓവനില്‍ 350 ഡിഗ്രി സെല്‍ഷ്യസില്‍  30  - 40 മിനുട്ട് ബേക്ക് ചെയ്യുക. തണുത്തതിനു   ശേഷം മുറിച്ചു ഉപയോഗിക്കാം

    DIY–Paper Craft: Peacock Love

    This beautiful Peacock love  paper craft is a perfect Wedding anniversary gift or Valentine’s day gift.

    I download this  beautiful peacock GSD file from http://einnej.typepad.com/einnej/ and cut this file using Silhouette Cameo Electronic Cutting Tool.

    First I cut out each of the pieces to make two  peacocks  in desired color cardstock papers. ( I cut out 2 copy of peacock body in both black and blue color cardstocks). Using household glue, attach one blue cardstock peacock body on top of the black peacock body. then I just arranged all the small pieces (feather, eyes, etc.) of each peacock together in place to make sure that it looks good before glue it.

    I glued all the piece in place. Then I decorated peacock feathers with Red Sequins, white and gold seed beads.

    I glued each peacock in a white 12*12 Linen Cardstock in desired style then I glued the Linen Cardstock to a 14*14 inch  thick cardboard ( so I got a thick base). Then I framed this beautiful picture using old vinyl blind (glued vinyl blind in all sides of the cardboard for framing the picture).

    DIY–Paper Quilled Jhumkas Tutorial

    This cute and stunning Jhumkas made up of Blue and Magenta  color paper quilling strips and Small white round pearl beads  . This jhumka is light-weight and perfectly matching to those who love to be different.

    Supplies needed:

    • Earring posts and ear backs  -  1 pair
    • Eye pins  - 1 pair
    • Paper Strips (desired colors) 
    • Small round White Pearl Beads
    • Small half-round white Pearls – 2 nos. 
    • 4mm flower shaped   Spacer Beads   2 nos. 
    • Gold plated flat cable chain  -  2 inch piece

    Tools Needed

    • Wire Cutter 
    • Round Nose Pliers 
    • Flat Nose Pliers

    METHOD

    Step 1 :

    Keep quilling desired color Quilling strips till you make a tight coil of the desired size to make your  Jhumka. Quilling strips of two colors were glued together before quilling the coil. Glue the end so that the coil is secure.

    Step 2:

    Slide and remove the coil from the slotted tool.

    Step 3:

    Now  gently push the center  of the rolled paper upwards in such a way that it brings out a conical shape. Now with the help of the needle tool and your fingers, set the shape (cup shape ) properly. Make sure there is some room in the cone's tip, to insert the eye-pin .

    Step 4:

    Apply a small amount of fabric glue on the inside of the cup shape and the outside. Allow it to dry. The structure will be secure now.

    Step 5:

    You can apply  clear color nail polish in the cup shape and ear stud base, that will give a glossy shine

    Step 6:

    Then  place one 4mm flower shaped Spacer Bead on top of the cup or cone shaped paper Jhumka   and  insert the eye-pin on the center of the  flower shaped Spacer Bead through the narrow hole of the Jhumka, in such a way that the `eye' sits inside of the cone, and bend the pin's other end from the top of the cone to steady it.

    Step 7:

    Using round nose pliers make a loop at the top. Use wire cutters to trim off any excess wire after making the loop. Before you close the loop, you can insert a small piece of Gold plated flat cable chain in the loop then close the loop well. 

    Step 8:

    Apply some glue at the end of the cup shape and arrange pearls to it  to make it more beautiful. Your Jhumka  is ready. Keep it aside.

    Step 9:

    Now for the stud, take one blue and Magenta paper strips and  make a smaller tightly quilled paper coil to make your  ear stud. Quilling strips of two colors were glued together before quilling the coil. Glue the end so that the coil is secure. .

    Step 10:

    Slide and remove the coil from the slotted tool.

    Step 11:

    Apply  a coat of fabric glue and allow it to dry.

    Step 12:

    Glue a small half-round white Pearl on the center of the coil. Now your ear stud is ready.

    Step 13:

    Then  apply glue on an earring post and attach the back end of the small small coil to the earring post. It has to hold on well and  allow it to dry completely.

    Step 14

    Now insert the other end of Gold plated flat cable chain (one end is attached with the cup shaped paper Jhumka ) in the ear stud post. Advantage of this method of Jhumka making is, you can wear stud alone if you wish or both the stud and hangings together as traditional Jhumkas. (Separating and joining together the ear stud and hanging is easy according to your occasions and dresses).

    Step 15:

    Repeat above steps  for the other earrings piece and make a  pair of Paper quilled jhumka earrings.

    DIY- Pistachio (pista) Shells Flower

    I am sharing something cute and easy to make for all who love pistachios.

    This is a Recycled craft. No need to throw away the pistachio shells. You can make lots of beautiful crafts like lotus, five or six petal flowers, peacock, Wall hangings , Candle holders, Chandeliers, Medallion/Pendant with Pista (Pistachio) shells.

    Materials Needed:

    1. Pistachio (pista) Shells
    2. Desired color acrylic paints or Permanent markers. I used Nail polish. (Don't use temporary colors as they will wash out).
    3. Paint Brush
    4. Craft Glue
    5. Wooden Standard Star Wood Craft Shape

    You simply need to color each of the pistachio shells. Then arrange them like the petals of Lotus flowers from the center of painted Star shape.  You can make pistachio flowers in several different colors.

    The  blank Standard Star shape is cut from very smooth birch plywood and so are very easy to paint , stain or wax. Wooden Standard Wood Craft Shapes are perfect to write on .They are perfect to decorate to make Christmas ornaments and plaques.Also they are a very simple shape and will be useful to both the craftworkers and the cardmakers.     Behr paint chips Flower Smiley

     

    Don’t throw Behr paint chips  away! There are plenty of ways you can turn those paint chips into decorative items for your home.

    When I saw these paint chips at Home Depot, they reminded me of flower petals. So I grabbed a handful of each color and decided to make some colorful Home decorative items out of this Behr’s petal-shaped paint chips.

    When designing a project, I always think about 2 things

    1) to make something beautiful, and

    2) to make something that's simple to construct.

    Materials Need to to make this Flower Smiley:

    1. Behr paint chips – free at Home Depot (any 2 color as your wish)
    2. Cut out a 1 and 1/2 inch circle from a cardboard for the base.
    3. Blue and pale green color cardstock paper ( You can choose any  two colors as your wish) Cut out 1 inch circle from the blue cardstock and 3/4th inch  circle from the green cardstock.
    4. Craft Glue
    5. Red  water color pen
    6. Googly eyes – 2

    Pistachio Shells decorated Popsicle Sticks Pen Holder

    This is a Recycled craft. In this craft, you can re-use old popsicle sticks,  a toilet paper roll (paper toilet roll tube) or a  ribbon roll.

    WHAT YOU WILL NEED:

    • Craft Sticks or Popsicle sticks or ice cream sticks
    • Pistachio Shells
    • Paint brush
    • Desired color Paints.
    • Cardboard roll from inside of toilet paper (toilet roll tube).
    • Craft Glue
    • Decorative Scissors
    • A piece of thick Cardboard  for base.

    DIRECTION:

    • Cut a square piece of cardboard with your decorative scissor to make the base of the pen holder.
    • Attach one end of the toilet roll tube to the cardboard square with a little glue to make base for the pen holder (to close it off). Allow it to dry.
    • If you want, paint the craft sticks whatever color you like. Let them dry. You can also leave the craft sticks in its natural color.

    • Apply glue to one side of the Popsicle stick and attach it to the toilet roll vertically; repeat until the roll is fully covered by the sticks.
    • You can use Glue stick to make it more firm. It should be strong enough to hold  lots of pen and pencils.
    • Leave to dry.
    • You can use it as a vase for fake flowers or a pencil holder.IMG_4369
    • Glue some paper flowers or butterflies or any shape to the outside of the Popsicle sticks pen holder to to make it more beautiful. I decorated my Popsicle Sticks Pen Holder with painted Pistachio Shells.
