Easy Chicken Curry

INGREDIENTS:
  • Chicken  - 1  lb (cleaned and cut into small pieces)
  • Onion (sliced) - 1 no 
  • Cloves - 2 no
  • Cinnamon Stick– 2" piece
  • Tomato  (diced) - 1 medium 
  • Ginger (chopped) - 1 inch piece
  • Cardamom  - 2 nos
  • Garlic pods  - 2 nos
  • Fennel  seeds  - 1/2 tsp
  • Star anise - 1 clove
  • Red Chilly Powder  - 1/2  tsp 
  • Black pepper powder   - 1/4 tsp 
  • Coriander  powder  - 1/2  tsp 
  • Turmeric Powder 1/4 tsp 
  • meat masala powder – 1/2 tsp (optional)
  • Salt  - to taste
  • Oil  - 2 Tbsp
  • Chopped coriander leaves - 1 TbspMETHOD:
  • Crush or dry grind cinnamon, cloves, star anise, cardamom, and fennel.
  • Then to this add ginger, garlic pods, all the powders and enough salt and grind well. If you want, add 2 or 3 tsp of water.
  • Take a medium mixing bowl and add sliced onion in it and mix it well with your hands.
  • Add ground mixture and 1 tbsp of coconut oil to the onion and work well with your hands to mix them well.
  • To this add chicken pieces and  mix well again.
  • Allow it to sit for 30 minutes.
  • Heat 1 Tbsp of oil in a medium pan and add marinated chicken in it. No need to add water.
  • Cover the pan with a lid and cook for 10 minutes.
  • Open the lid and add chopped tomatoes and saute' well.
  • Cover the pan again and cook for another 20 minutes. Open the lid and saute' in between.
  • Cook till chicken is cooked completely.
  • Garnish Chicken Curry with Chopped coriander leaves.
  • Serve hot with Rice, Roti or Appam.
