Pumpkin(Mathanga) Curry

INGREDIENTS:
  • Pumpkin (cut into cubes) - 1/8 th portion of a pumpkin.
  • Green gram dal - 1/4 cup.
  • Coconut grated - 1/4 cup.
  • Cumin seeds - 1/4 tsp.
  • Turmeric powder - 1/4 tsp.
  • Green chillies - 4 nos
  • Shallots - 3 sliced.
  • Curry leaves - 1 spring
  • Mustard seeds - 1/4 tsp
  • Oil - 1 tbsp
  • Dry red chilly - 2 broken
  • Salt - To taste
METHOD:
  • Pressure cook the Green gram until it is half cooked.
  • Add the pumpkin and 2 green chilies and pressure cook for 2 more whistle.
  • Grind the coconut,cumin seeds, green chilies, turmeric powder and salt to a fine paste with some water.
  • Add this ground paste to the cooked green gram-pumpkin mix and bring to a simmer.
  • Heat coconut oil in a frying pan.
  • Splutter mustard seeds.
  • Add curry leaves, chopped shallots and red chili to it.
  • Saute, until the shallots turns golden brown.
  • Pour the above seasoning into the pumpkin-green gram mix.
  • Turn the flame off and cover the dish and keep for 20 minutes.
