Onam Special: Cucumber kichedi
INGREDIENTS:
- Cucumber peeled,deseeded and cut into small dices – 5 cups
- Green chillies slit – 12 nos
- Grated coconut – 2 cups
- Beaten curd – 4 cups
- Cumin seeds – 1/2 tsp
- Mustard seeds – 1 tsp
- Red Chillies – 5 nos
- Curry leaves – 3 sprig
- Coconut oil – 3 tbsp
- Salt – to taste
METHOD:- Take the peeled,deseeded and cut into small diced cucumber.
- Add salt,4 sliced green chillies and 2 cups of water to the cucumber pieces.
- Cover it and cook in medium heat till the mixture is dry .
- Grind together grated coconut and cumin seeds, remaining green chillies and add this ground mixture to the cucumber.
- Add beaten curd to this and mix well.
- Heat coconut oil in a pan,allow mustard seeds to splutter.Add red chillies and curry leaves and fry for a while.
- Pour the seasoning over the kichadi.
- Mix well and serve with rice.
