Onam Special:Ada Pradhaman


INGREDIENTS:
  • Ada -750gm
  • Sago(sabudana/chauwari)-1/2 cup
  • Coconut milk-1 liter
  • Jaggery-1 kg
  • Cashew nuts-200 gm
  • Dried coconut pieces-1/2 cups
  • Raisins - 1/4 cup
  • Dried ginger powder-1tsp
  • Salt-1/2 tsp
  • Ghee-150 gm
  • Cardamom powder-2 tsp
METHOD:
  • First, add 3 cups of water in 3 cups of thick coconut milk to make it thin.Take the thick coconut milk in another bowl.Keep all the milk aside.
  • Now boil 3 cups of water and add jaggery, keep on stirring till it is fully melted.
  • Then strain it and keep aside.
  • Add Ada in 10 glasses of boiling water and cook well. If the ada is long in size, cut into pieces by hand.
  • Once it become very soft remove from the fire and drain them. If you feel the ada to be sticky, pour one cup of cold water on the ada to remove the starch and drain it.
  • Now cook the chauwari in 6 glasses of water.
  • When it done, it will appear to be transparent and soft.
  •  So keep that also aside. Sago/chauwari is optional.You can make Ada Pradhaman without Sago.
  • Fry dried coconut pieces, cashew nuts and raisins in 2 Tbsp of ghee and keep it aside.If you want, you can fry each item separately.
  • Heat a thick deep bottomed pan and add melter jaggery in it. 
  • Now add cooked ada into the jaggery and stir well.
  • Now add sago and stir well.
  • Sometimes ada may seems to be hard and sticky, it will get separate and become soft while stirring.
  • Stir continuously and cook until the mixture becomes thick and start separating from the side of the pan.
  • Now add 150 gm of ghee in to it and stir well.
  • Then add the thin milk and mix well it till boils.
  • Cook till it becomes thick. 
  • Add one pinch of salt .
  • When it become thick, add the thick milk and stir well until it become thick again.

  • Remove from the fire and add fried cashew nuts, raisins and coconut pieces. Add the cardamom powder and dried ginger powder and close the pan with a tight lid for 10 minutes. 
  • Then open it and mix well
  • Now Ada Pradhaman is ready to serve.
  • If you feel the Ada Pradhaman is too thick, you can dilute it by adding more coconut milk or drinking milk.
