- Chicken - 1 lb (cleaned and cut into small pieces)
- Onion (sliced) - 1 no
- Cloves - 2 no
- Cinnamon Stick– 2" piece
- Tomato (diced) - 1 medium
- Ginger (chopped) - 1 inch piece
- Cardamom - 2 nos
- Garlic pods - 2 nos
- Fennel seeds - 1/2 tsp
- Star anise - 1 clove
- Red Chilly Powder - 1/2 tsp
- Black pepper powder - 1/4 tsp
- Coriander powder - 1/2 tsp
- Turmeric Powder 1/4 tsp
- meat masala powder – 1/2 tsp (optional)
- Salt - to taste
- Oil - 2 Tbsp
- Chopped coriander leaves - 1 TbspMETHOD:
- Crush or dry grind cinnamon, cloves, star anise, cardamom, and fennel.
- Then to this add ginger, garlic pods, all the powders and enough salt and grind well. If you want, add 2 or 3 tsp of water.
- Take a medium mixing bowl and add sliced onion in it and mix it well with your hands.
- Add ground mixture and 1 tbsp of coconut oil to the onion and work well with your hands to mix them well.
- To this add chicken pieces and mix well again.
- Allow it to sit for 30 minutes.
- Heat 1 Tbsp of oil in a medium pan and add marinated chicken in it. No need to add water.
- Cover the pan with a lid and cook for 10 minutes.
- Open the lid and add chopped tomatoes and saute' well.
- Cover the pan again and cook for another 20 minutes. Open the lid and saute' in between.
- Cook till chicken is cooked completely.
- Garnish Chicken Curry with Chopped coriander leaves.
- Serve hot with Rice, Roti or Appam.
