Cabbage Carrot Pakkodas

Cabbage Carrot  Pakoda (2)Pakkodas or Pakodas are fritters made with different vegetables like Cabbage, Carrots, potato, onion, cauliflower etc or boiled eggs or chicken dipped in a batter and deep fried. Usually Pakkoda batter made with besan/chickpea flour but we can make it more healthier and tastier by using wheat flour, rice flour,oats flour, ragi flour,flax meal etc. In this  recipe I used besan flour and wheat flour.

INGREDIENTS:

  • Cabbage, thinly chopped or shredded – 1 cup
  • Carrot, washed, peeled and shredded – 1 cup
  • Onion, thinly chopped – 1 no, medium sized
  • Chopped coriander leaves/Cilantro – 3 Tbsp
  • Green chillies, finely chopped – 3 nos
  • Ginger – 2” piece ( crushed)
  • Garlic – 2 Pods (crushed)
  • Oil for deep frying
  • INGREDINETS for BATTER

  • Chickpea Flour/Besan flour – 1/4 cup
  • Wheat Flour – 1/4 cup
  • Fennel  powder – 1/4 tsp
  • Meat masala – 1/2 tsp
  • Red chilly powder – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Turmeric Powder – 1/8 tsp
  • Asafoetida – 1/4 tsp
  • Warm water – 1/4 cup
  • Salt – to taste

    METHOD:

  • In a medium sized bowl, add shredded cabbage, carrot, onion, chopped green chillies, crushed ginger, garlic, coriander leaves and a pinch of salt. mix everything well with your clean hand. Keep it aside for 10 minutes.
  • In another medium sized bowl, add all the ingredients for batter and mix everything well.
  • Now add the cabbage carrot mixture to the prepared batter and mix well. check for the salt. Add enough water to the ingredients.  The consistency of the batter should be thick.
  • Leave to stand the batter for at least 10 minutes, during this time the mixture will fully absorb the moisture.
  • Meanwhile, heat oil for frying in a medium sized pan. This temperature should be below smoking point.
  • Scoop out a spoonful of the thick batter and place it carefully in the oil.
  • Repeat the same with each spoonful batter, but allow a second or two between each one and place each spoonful of batter 2” apart.
  • Fry each Pakkoda for about 3 to  4 minutes in medium heat , or until cooked right or bottom side become golden brown, then turn them over carefully to fry on the other side, for another minutes.
  • Remove well fried pakkodas with slotted spoon and drain on a paper towel.
  • Repeat the process of frying pakkodas with remaining batter and drain each pakoda batches with paper towel.
  • Serve immediately your delicious, spicy Cabbage Carrot  Pakodas  with salad garnishes, lemon wedges and chutneys or simply enjoy Cabbage Carrot  Pakodas with hot Tea or Coffee.

    • സവാള  ചെറുതായി അരിഞ്ഞതു – 1
    • പച്ച മുളക്, ചെറുതായി വട്ടത്തിൽ അരിഞ്ഞതു – 3
    • ഇഞ്ചി, നന്നായി ചതച്ചത് -  ഒരു കഷ്ണം
    • വെളുത്തുള്ളി - നന്നായി ചതച്ചത് - 2 അല്ലി
    • മല്ലിയില ചെറുതായി നുറുക്കിയത് :- കാല്‍ കപ്പ്‌
    • പെരും ജീരകം പൊടിച്ചത് - കാൽ സ്പൂണ്‍
    • കായം - കാൽ സ്പൂണ്‍
    • മഞ്ഞൾ പൊടി - 1 നുള്ള്
    • മല്ലി പൊടി - അര സ്പൂണ്‍
    • മുളക് പൊടി - അര സ്പൂണ്‍
    • കടലമാവ് - അര കപ്പ്‌
    • അരി പൊടി - കാൽ കപ്പ് (optional)
    • ഉപ്പ് – ആവശ്യത്തിനു
    • എണ്ണ - വറുക്കാൻ ആവശ്യത്തിനു

    തയ്യാറാക്കുന്ന വിധം

    കടലമാവ് ആവശ്യത്തിനു വെള്ളം ചേര്‍ത്ത്, എണ്ണ ഒഴികെയുള്ള   മറ്റു  എല്ലാ ചേരുവകളും ചേര്‍ത്ത് നന്നായി  ഇളക്കിയെടുക്കുക. ഉപ്പു പാകത്തിന് ഉണ്ടോ എന്ന് ഉറപ്പു വരുത്തുക. ഒരുപാട് വെള്ളം ചേർത്ത് കുഴക്കേണ്ടത് ഇല്ല. കൂട്ട് ഒരുപാട് അയഞ്ഞു പോകരുത്. മാവ് ഇഡ്ഡലി പരുവത്തിൽ കുഴച്ചാൽ മതിയാകും. ഇനി തിളച്ച എണ്ണയിലെയ്ക്ക് മെല്ലെ ഓരോ  സ്പൂണ്‍ വീതം, 1" അകലെയായി  കോരി ഒഴിച്ചു രണ്ടു വശവും നന്നായി മൊരിച്ചെടുക്കുക.

    Chapati and Potato Carrot Curry

    Chapati, or Chapathi is an unleavened flat bread from India. It is  also known as Roti. It is a common staple of cuisine in South Asia. Chapati is typically made with whole wheat flour, warm water, oil and salt to make soft dough. Allow the dough to rest for some time. Make small balls from the soft dough. Using a roller, roll each ball to round disc then it is cooked in heated griddle.

    Strawberry Milk Shake

    INGREDIENTS:

    • Strawberries, hulled – 2 Cups
    • Fat free Milk – 2 Cups
    • White Sugar – 3 Tbsp
    • Vanilla essence – 2 drop (You can use a pinch of cardamom powder instead of Vanilla essence)

    METHOD:

    Easy way to cut up strawberries that is also fast:

    1. I used to place Strawberries  in a colander and rinse them with cool water.  Then spread the strawberries in a single layer on a clean kitchen towel or layers of paper towels and pat them dry.
    2. Now start by picking off the green tops from every strawberry. Just try to get most of it off.
    3. Cut the tops off the strawberries with a knife. Don't cut the nice red part, just cut the raw, green or white part off. (To make juice or milkshake or smoothies, it is not necessary to cut the strawberries)
    4. Slice each of them lengthwise to get  2 equal parts.
    5. To easily cut strawberries,  turn each strawberry upside-down onto the freshly cut top. Now, cut right down the middle. Turn the strawberry around and cut down the middle again to make quartered strawberries. Repeat for each berry.

    • In a blender combine strawberries, milk, and sugar. Blend until smooth.
    • Pour the milkshake out into the chilled glasses and garnish with strawberries. Slurp immediately!

    Appam is a fermented rice pancake with soft and spongy texture in the middle and lacy crispy edges. Appam is one of the traditional breakfast dishes of Kerala cuisine. It is the South Indian yeasted, flat bread. It is also very popular in Sri Lanka, where it is known as "appa" (or "hopper"). Appam is very delicious and healthy breakfast dish to start the day off. It can be serve as dinner too.

    Potato Carrot Curry

    This is simple and delicious Potato Carrot Curry.  This is a great creamy curry recipe. Potato Carrot Curry is quick and easy to make.

    INGREDIENTS:

    • Potatoes – 2, Big sized, peeled and cubed
    • Carrots – 2, medium sized, peeled and cubed
    • Onion – 1 big,  thinly sliced.
    • Green Chillies – 3or 4, slit open lengthwise.
    • Salt – to taste
    • Ginger – 2” piece.
    • Garlic cloves – 2 nos.
    • Thick Coconut milk or regular drink milk – 1/4 cup
    • Water –  2 cups
    • Coconut oil – 1  tsp
    • Chopped coriander leaves – 1 Tbsp

    METHOD:

    • Heat oil in a heavy  bottomed  pan. Add chopped ginger, crushed garlic, and sauté well.
    • Then add the onion and green chilies and sauté for a few minutes till the onion becomes soft/transparent.
    • Add the cubed potatoes, carrots , salt, 2 cups of water , and mix well. Cover it and allow them to cook in medium flame.
    • When the potatoes and carrots  fully cooked, add  thick coconut milk /drinking milk and reduce heat; simmer and cook for 2 more minutes.

    • Check for the salt and remove the potato-carrot  curry from fire.
    • Transfer your delicious thick potato-carrot  curry to a serving bowl.
    • Garnish with chopped coriander leaves.

    • Serve hot with Appam, Idiappam or Chapatti.

    NOTE:

    This is thick potato-carrot curry. You can adjust the consistency of this curry by adding warm water.

    Avocado Banana Milk Shake

    INGREDIENTS:
  • Ripe avocado,  halved and pitted – 1 no
  • Ripe  Jamaican banana – 1 no
  • Oats – 1 Cup
  • Fat free milk – 2 cup
  • Cardamom Powder – 1 pinch (optional)
  • Honey – 3 or 4 Tbps


  • Avocado Banana Milk Shake (2)
    METHOD:
    • If you want, you can boil the milk and allow it to cool.
    • If you want, you can cook oats by adding 2 cups of water in a small pot for a minute or two, stirring often until it becomes thick and bubbly.
    • Remove oats from heat and allow it to cool.
    • Scoop the flesh from the avocado into a blender.
    • Add banana, milk, honey, oats and cardamom power to  the blender.
    • Blend until creamy and smooth. Serve immediately.
    • If  you want, chill in refrigerator  then pour into glasses and enjoy.

    1. അവോകാഡോ, പഴുത്തത് – 1 no  
    2. നന്നായി പഴുത്ത പഴം – 1 no
    3. Oats – 1 Cup
    4. തിളപ്പിച്ചാറ്റിയ പാൽ - 2 കപ്പ്‌
    5. തേൻ – 3 or 4 Tbsp
    6. ഏലയ്ക്ക പൊടി - 1 നുള്ള്
    തയ്യാറാക്കുന്ന വിധം
    • അവോകാഡോയുടെ ഉളളിലെ മാംസള ഭാഗം
    • മാത്രം വേര്‍തിരിച്ചെടുക്കുക.  അതിനെ ഒരു ചെറിയ Bowl ലേക്ക് മാറ്റുക.   ഇത് ഒരു സ്പൂണ്‍ ഉപയോഗിച്ച് പതിയെ പതിയെ ഉടയ്ക്കുക. അവോകാഡോയെ ഉടയ്ച്ചു പേസ്റ്റ് പോലെ ആക്കിയാലും കുഴപ്പമില്ല.
    • 1 മുതൽ 6 വരെയുള്ള ചേരുവകകൾ  ചേർത്ത് മിക്സിയിൽ അടിച്ചെടുക്കുക.
    • ഫ്രിഡ്ജ്‌ ൽ വച്ച് തണുപ്പിച്ചോ അല്ലാതെയോ ഗ്ലാസ്സ്കളിലേക്ക്  വിളമ്പി ഉപയോഗിക്കാം
