INGREDIENTS:
- Potato – 2 nos
- Egg plant – 1 no
- Cucumber – 1/4
- Carrot – 1 no
- Green chillies , sliced – 2 nos
- All purpose flour – 1/2 cup
- Baking powder – 1/2 tsp
- Bread crumbs – 1/2 cup
- Turmeric powder – 1/4 tsp
- Meat masala – 1 tsp
- Red chilly powder – 1/2 tsp
- Black Pepper powder – 1/2 tsp
- Garam masala – 1/2 tsp
- Coriander leaves, chopped – 3 Tbsp
- Salt – to taste
- Butter/Oil– 1 tsp
- Cut all the vegetables medium size.
- Cook them well by adding enough water , 1/4 tsp turmeric powder and salt.
- When all the vegetables well cooked, drain excess water and mash all the veggies well.
- Then add Salt, Red chilly powder, Garam masala , Black pepper powder, Meat masala and Coriander leaves to the mashed vegetables and mix well. Check for the salt.
- Mix flour and baking powder to the vegetables mixture.
- Make small balls of the mixture, around the size of a meatball.
- Gently flatten each ball after you’re done rolling it.
- Cover the flattened patty with the breadcrumbs, on both sides and keep aside on the baking tray.
- Finish making all the patties and keep aside in the fridge for about 30 minutes.
- Preheat oven to 300 degree F.
- Grease your baking tray with butter or oil.
- After 30 minutes , place the vegetable patties in your greased baking tray 2 inch apart.
- Bake them till the patties are golden-brown on each side.
- you can have these tasty vegetable patties as breakfast, snack or dinner.
- Serve with some Coriander chutney or Tomato ketchup.
- If you like you can sandwich these vegetable patties in burger buns or bread.
