Cucumber Kichadi

INGREDIENTS:
  • Cucumber, peeled and deseeded and cut into small dices - 1 cup
  • Grated coconut - 1/4 cup
  • Green chilies(chopped) - 3 nos
  • Mustard seeds - 1/4 tsp
  • Beaten curd – 1/2 cup
  • Cumin seeds - 1/4 cup
  • Dry red chilies - 2 
  • Curry leaves - 1 spring
  • Coconut oil - 1 Tbsp
  • Salt - To taste
  • Water - 1/2 cup
METHOD:
  • Add salt,green chilies and 1/2 cup of water to the cucumber pieces.
  • Cover it and cook in medium heat till the mixture is dry .
  • Grind together grated coconut and cumin seeds, and add this ground mixture to the cucumber.
  • Add beaten curd and mix well.
  • Heat coconut oil in a pan,allow mustard seeds to splutter.
  • Add red chilies and curry leaves and fry for a while.
  • Pour the seasoning over the kichadi.
  • Mix well and serve with rice.
