Cucumber Kichadi
INGREDIENTS:
- Cucumber, peeled and deseeded and cut into small dices - 1 cup
- Grated coconut - 1/4 cup
- Green chilies(chopped) - 3 nos
- Mustard seeds - 1/4 tsp
- Beaten curd – 1/2 cup
- Cumin seeds - 1/4 cup
- Dry red chilies - 2
- Curry leaves - 1 spring
- Coconut oil - 1 Tbsp
- Salt - To taste
- Water - 1/2 cup
METHOD:
- Add salt,green chilies and 1/2 cup of water to the cucumber pieces.
- Cover it and cook in medium heat till the mixture is dry .
- Grind together grated coconut and cumin seeds, and add this ground mixture to the cucumber.
- Add beaten curd and mix well.
- Heat coconut oil in a pan,allow mustard seeds to splutter.
- Add red chilies and curry leaves and fry for a while.
- Pour the seasoning over the kichadi.
- Mix well and serve with rice.
