Pumpkin(Mathanga) Curry
INGREDIENTS:
- Pumpkin (cut into cubes) - 1/8 th portion of a pumpkin.
- Green gram dal - 1/4 cup.
- Coconut grated - 1/4 cup.
- Cumin seeds - 1/4 tsp.
- Turmeric powder - 1/4 tsp.
- Green chillies - 4 nos
- Shallots - 3 sliced.
- Curry leaves - 1 spring
- Mustard seeds - 1/4 tsp
- Oil - 1 tbsp
- Dry red chilly - 2 broken
- Salt - To taste
METHOD:
- Pressure cook the Green gram until it is half cooked.
- Add the pumpkin and 2 green chilies and pressure cook for 2 more whistle.
- Grind the coconut,cumin seeds, green chilies, turmeric powder and salt to a fine paste with some water.
- Add this ground paste to the cooked green gram-pumpkin mix and bring to a simmer.
- Heat coconut oil in a frying pan.
- Splutter mustard seeds.
- Add curry leaves, chopped shallots and red chili to it.
- Saute, until the shallots turns golden brown.
- Pour the above seasoning into the pumpkin-green gram mix.
- Turn the flame off and cover the dish and keep for 20 minutes.
