Onam Special: Cucumber kichedi

INGREDIENTS:
  • Cucumber peeled,deseeded and cut into small dices – 5 cups
  • Green chillies slit – 12 nos
  • Grated coconut – 2 cups
  • Beaten curd – 4 cups
  • Cumin seeds – 1/2 tsp
  • Mustard seeds – 1 tsp
  • Red Chillies – 5 nos
  • Curry leaves – 3 sprig
  • Coconut oil – 3 tbsp
  • Salt – to taste
METHOD:
  • Take the  peeled,deseeded and cut into small diced cucumber.

  • Add salt,4 sliced green chillies and 2 cups of water to the cucumber pieces.
  • Cover it and cook in medium heat till the mixture is dry .
  • Grind together grated coconut and cumin seeds, remaining green chillies and add this ground mixture to the cucumber.
  • Add beaten curd to this and mix well.
  • Heat coconut oil in a pan,allow mustard seeds to splutter.Add red chillies and curry leaves and fry for a while.
  • Pour the seasoning over the kichadi.
  • Mix well and serve with rice.
