Tomato Curry

INGREDIENTS:
  • Tomatoes,finely chopped -  2nos
  • Onion, finely chopped - 1 no
  • Green Chilies, sliced  - 2 nos
  • Ginger Garlic Paste - 1/4 tsp
  • Red Chili Powder - 1/4 tsp
  • Turmeric Powder - a Pinch
  • Cilantro, chopped - 2 tsp
  • Salt -  To taste
  • Mustard Seeds - 1/4 tsp
  • Curry Leaves - 1 string
  • Oil - 1 Tbsp
METHOD:

  • Heat oil in a pan, add Mustard Seeds.
  • When mustard seeds start spluttering, add onion, green chilies and curry leaves.
  • Fry till onion turns brown, add ginger garlic paste, turmeric powder and salt.
  • Fry for a minute, add finely chopped tomato and red chili powder. Make sure onion is thoroughly browned before adding tomato.
  • Cook covered on low flame till tomato turns soft but not completely mushy.
  • Uncover, garnish with chopped cilantro and remove from heat.
