Strawberry cup cakes
INGREDIENTS:
- All Purpose Flour - 1 1/4 Cups
- Sugar - 1 Cup
- Baking Powder - 1 Tbsp
- Salt - 1/2 Tsp
- Butter - 1 Cup
- Eggs - 4 nos
- Vanilla - 1 Tsp
- Mashed Strawberries - 1/2 Cup
- Strawberry Syrup - 1/4 Cup (optional)
METHOD:
- Preheat oven to 350°. Line two 6-cup muffin pan with cupcake liners; set aside.
- Sift together the all purpose flour,sugar, baking powder & salt.
- Add it in a mixing bowl and mix well.
- Add melted butter to the flour mix and mix well.
- In another mixing bowl, beat together the 4 eggs.
- Add the mashed strawberries, strawberry syrup & vanilla in it and mix well.
- Slowly add the wet ingredients into the dry, and mix well.
- Divide batter evenly among prepared muffin cups.
- Transfer muffin tin to oven and bake until tops are just dry to the touch, 25 minutes.
- Transfer muffin pan to a wire rack and let cupcakes cool completely in pan before icing.
