Varutharacha Chicken Curry
INGREDIENTS:
- Chicken –1/2 kg
- Onion (chopped) –2 medium size
- Green chilly(cut lengthwise) – 2
- Ginger – 2 “ piece
- Garlic pods –4 nos
- Tomato (chopped) – 2
- Grated Coconut - 1/2 cup
- Turmeric powder – 1/4 tsp
- Red Chilly Powder –1 tsp
- Coriander powder – 2tsp
- Fennel powder (perumjeerakam) –1/2 tsp
- Shallots – 5 nos
- Cardamom powder – 1/8 tsp
- Cloves – 4 nos
- Cinnamon powder – 1/2 tsp
- Curry leaves – 1 Spring
- Chopped Coriander leaves – 2 Tbsp
- Bay leaves – 2 nos
- Coconut Oil – 3 tsp
- Salt as required
- Water – 1 to 2 cupsMETHOD:
Heat 1/2 tsp oil in a pan and add grated coconut ,shallots,cardamom,cloves,cinnamon powder and saute well till coconut becomes brown in color.Grind the mix with 1/2 cup of water into a fine paste. Keep it aside.
In the same pan add turmeric powder,coriander powder,red chilly powder,fennel powder,and roast well.
Heat 2 tsp of oil in a heavy bottomed pan add chopped onions,green chilly,ginger-garlic paste, and
sauté well till the onion become soft.
Then add chopped tomatoes and
sauté well.( I usually grinding the chopped tomatoes and adding that tomato paste)
Add roasted turmeric powder,coriander powder,red chilly powder,fennel seeds powder,and sauté well.
Then add chicken pieces to it. Add 1 cup of water to it and mix well.
Cover with the lid and cook for 20 minutes.Then open the the lid and stir well.
Now add coconut paste and sauté well and let it boil for 3 – 5 minutes.
Finally add curry leaves,Coriander leaves, and bay leaves to the curry.
Yummy chicken curry is ready to serve .
