Banana Walnut Bread

Banana-walnut Bread (4)It is quick and easy to prepare. Even though it is a bread,  you can call it as Banana Walnut cake or simply Cake because it is so soft , sweet and truly delicious one. Making Banana bread or muffins or pancake, is a great way to use very ripe bananas in your fruit bowl. Both Kids and adult can enjoy this bread.

INGREDINETS:

  • All purpose flour – 2 cups + 2 Tbsp
  • Baking Powder – 1 tsp
  • Baking soda – 1 tsp
  • Salt – 1/2 tsp
  • Sugar – 3/4 cup or 1 cup ( deepens on sweetness you want)
  • Large eggs – 3 nos
  • Butter (at room temperature) – 1 stick (4 ounce)
  • Ripe Bananas, crushed – 2 large or 3 smaller (1 to 1 1/2 cup)
  • Walnuts, chopped – 3/4 cup

    • Measure and place all the ingredients in your work place to make Banana Walnut Bread.
    • In a large bowl combine together All purpose flour, Baking powder, Baking soda and Salt. keep it aside.
    • Grease a 9 x 5 x 3 inch pan with butter and dust with 1 tsp flour. Lining cake pans also helpful to prevent sticking, so that you can easily and cleanly remove the cake from the pan. So if you want, cut out a piece of parchment paper or wax paper in the size of pan bottom and lay in it. 
    • Preheat oven to 350degree F.
    • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, beat butter at high speed until it is soft and smooth, about 1 minutes. (if you don’t have Standing mixer, place butter in a large bowl and mix well using a hand mixer )
    • Add sugar to the bowl and  beat well, at medium speed, until the mixture is light and fluffy. Scarp down the bowl with a large rubber spatula once or twice in between. Total mixing time is 4 to 5 minutes.
    • Now add the eggs one at a time, beat in medium speed, only until well blended. Scrape down the bowl once or twice.
    • Add the dry ingredients (All purpose flour, Baking powder, Baking soda and Salt) and beat until the mixture is smooth. banana-walnut bread and muffin (3)
    • Now add the crushed bananas and milk and mix just until incorporated.

    • Finally fold in 3/4 cup chopped walnuts.
    • Pour the batter into the greased baking pan and level the top. Fill the pan about three-quarters full.
    • Bake for 55 minutes until the top become browned and feels springy to touch and  a toothpick inserted in the center comes out clean.
    • Allow the Banana Walnut Bread to cool 20 minutes before removing from the pan.

    • Then remove from pan,  and cool completely on wire rack. babana-walnut Muffins (11)
    • The delicious Banana Walnut Bread is ready to serve. Slice and serve with light whipped cream cheese, if desired.
    • The Banana Walnut Bread is best if served the next day.

    NOTE::

    If there is any excess batter, you can use it to make cupcakes/Muffins.
