Homemade Old-Fashioned Blueberry Muffins

This is  a simple recipe is for breakfast or dessert.  Successful and delicious, soft Muffin making depends on 3 important activities – measuring, mixing and baking. 
INGREDIENTS:


  • All-Purpose Flour – 1 1/2 cup (375 mL)
  • Whole Wheat Flour – 1 cup (250 mL)
  • Sugar – 1/2 cup (125 mL)
  • Salt – 1/2 tsp (2mL)
  • Baking Powder – 1 Tbsp (15 mL)
  • Melted Butter – 1/2 cup (125 mL)
  • Milk – 1 1/4 cup (300 mL)
  • Egg – 2 nos
  • Fresh or Frozen Blueberries – 1 1/2 cup ( 375 mL)
  • METHOD:

  • Preheat oven to 400 degree F.
  • Grease 12- cup muffin pan or Two 6-cup muffin pans. If you want, line Muffin pan with muffin liners.blueberry Muffins (2)
  • In a large bowl beat eggs well. Add milk and butter to this and mix well using a hand mixer.
  • Add sugar and salt to this and mix well.

  • Now add All-Purpose Flour , Whole Wheat Flour, Baking Powder to this egg-milk mixture, mix everything well. Fold in blueberries.

  • Spoon batter to prepared muffin pan, dividing evenly.
  • Bake in preheated oven for  20  to 25 minutes or until done. Regular size muffins bake in 18 to 20 minutes, mini-muffins bake in 10 minutes. Muffin bake best on the middle rack in the oven.
  • Serve your  Old-Fashioned Blueberry Muffins immediately or store in airtight container for 2 to 3 days.

    How to choose Blueberries::
    Choose blueberries that are firm and have a lively, uniform hue colored with a whitish bloom. Shake the container, noticing whether the berries have the tendency to move freely; if they do not, this may indicate that they are soft and damaged or moldy. Avoid berries that appear dull in color or are soft and watery in texture. They should be free from moisture since the presence of water will cause the berries to decay. When purchasing frozen berries, shake the bag gently to ensure that the berries move freely and are not clumped together, which may suggest that they have been thawed and refrozen. Blueberries that are cultivated in the United States are available from May through October while imported berries may be found at other times of the year.
