Sweet Aloo-Gobi Masala/Cauliflower-Sweet potato Masala

A cruciferous vegetable, cauliflower means "cabbage  flower"  derived from the Latin terms caulis (cabbage) and floris (flower). Cauliflower is a rich source of  vitamin C and selenium, which act as antioxidants and  help strengthen the immune system by fighting against infections such as the common cold, flu, and bronchitis.

Sweet Aloo-Gobi Masala/Cauliflower-Sweet potato Masala  is a delicious side dish made with cauliflower, tomato, onion and sweet potatoes and become tasty when is to be cooked in great blend of spices.  This is my own recipe.  It was just an experiment but its taste is really amazing. You can serve this tasty Sweet Aloo-Gobi Masala along with dal and rice or with any Indian bread, puri or chapatti or paratha.

Cauliflower-Sweet potato Masala  (2)

INGREDINETS:

  • Cauliflower  Florets – 3 nos
  • Sweet potato – 1, medium
  • Onion, thinly sliced – 1, medium
  • Green chillies, slit lengthwise  – 2 nos
  • Tomato , chopped – 1, medium
  • Ginger, chopped – 1” piece
  • Garlic, crushed – 2 nos
  • Red chilly powder – 1 tsp
  • Chicken masala/Meat masala – 2 tsp
  • Water – 1/4 cup
  • Salt – To taste
  • Milk – 3 Tbp(optional)
  • Cocount oil – 2 Tbps
  • Mustard seeds – 1/4 tsp
  • Chopped coriander leaves – 2 Tbsp

    METHOD:

  • Separate the cauliflower florets into small pieces . If florets are larger than desired, they can be cut down further by cutting each cluster into smaller uniform size pieces. Finish cutting the remainder of the head in the same manner.
  • Wash them under running water and sock them in hot water with salt or in or vinegar water for 10 minutes to to help force any insects out that are lodged within the florets.Strain and pat dry with a paper towel.
  • Chop tomatoes and keep it aside.
  • Peel the Sweet Potato skin and cut into medium sized cubes.
  • Place cubed sweet potatoes in a vessel , cover and cook them by adding 1/2 cup of water till it cooked well. Then allow them to cool.
  • Meanwhile Heat 1 Tbsp oil in a heavy bottomed pan and  shallow fry the cauliflower pieces till it become golden brown. Transfer them to a bowl and  keep it aside. Allow them to cool.
  • Heat 1Tbps of oil in the same pan and splutter mustad seeds in it.
  • Now  add chopped onion, sliced green chillies, chopped garlic and ginger and salt in it and sauté well till onions become transparent.
  • Then add red chilly power and Chicken masala/Meat masala to the pan and mix everything well. Add  1/4 of water,cover it and cook in low flame. 
  • Place shallow fried cauliflowers, cooked sweet potatoes and chopped tomatoes in a mixer or blender and just crush or grind it to make them very small pieces, no need to make paste or puree.
  • Now add the ground cauliflower sweet potato mixture to the pan and mix everything well. Add enough water and reduce heat; simmer and cook for 3 more minutes or until you get the required consistency. check for the salt.
  • To this add 3 Tbsp of milk and mix well.
  • To avoid the smell of cooking cauliflower is simply add 2 or 3 tbsp of milk in it.
  • This is really thick , cauliflower sweet potato curry. If you want, you can increase the curry consistency by adding warm water.
  • Transfer delicious Sweet Aloo-Gobi Masala/Cauliflower-Sweet potato Masala to a serving bowl.
  • Garnish cauliflower sweet potato masala with chopped coriander leaves.
  • It goes well with Chapatti, Naan, Appam and dosa.

    NOTES:

    • Adding milk to the water will help the cauliflower keep its white color and will sweeten the flavor of the cauliflower.
    • Do not cook cauliflower in an aluminum or iron pot because the chemicals in cauliflower react with the metals in the pots and this causes the cauliflower to become discolored.
