Banana Pancake

Banana Pancake (2)This is  a simple recipe is for breakfast or dessert. 

INDREDIENTS :

  • All purpose flour – 2 cups
  • Fully ripe Bananas, crushed – 1 or 2
  • Granulated sugar – 2 Tbsp
  • Baking powder – 2 tsp
  • Salt – 1/4 tsp
  • Egg – 2 , beaten
  • Milk – 2 cups
  • Olive oil or coconut oil – 2 Tbsp

METHOD:

  • In a medium mixing bowl combine all purpose flour, sugar, baking powder and salt. Mix everything well and keep it aside

  • In another medium mixing bowl beat eggs, one at a time then  mash bananas well, add milk and oil and mix well.
  • Add egg- banana  mixture to the flour mixture. Just mix until moistened, the batter should ne lumpy.
  • Heat a griddle or skillet and grease it with oil or butter.
  • To make 4 – inch thick pancake, pour a big spoon full of batter onto the greased hot griddle or skillet.
  • Cook over medium heat about 2 minutes on each side or until pancakes are golden.

  • Banana pancake is ready to turn when top is bubbly all over and a few bubbles are broken  and he edges should be slightly dry.
  • Serve warm with butter or margarine and warm maple syrup or honey.
