Eggless Jackfruit Cake

The jack fruit cake can be made many different ways in different places using different ingredients. This recipe  is very simple and easy to prepare. Jackfruit cake  is really yummy. Each bite of this cake is  "A little Piece of Heaven" to the person who taste it and that will impress the taste buds!  It is delicious by itself.

Jackfruit cake  (4)The jackfruit tree is widely cultivated in tropical regions of India, Bangladesh,  Sri Lanka, Thailand, Nepal, Vietnam, Indonesia, Philippines and Malaysia. Jack fruit is the national fruit in Bangladesh.

In Kerala, varikka chakka (വരിക്ക) and koozha (കൂഴ) are the  two predominate varieties of jackfruit. Varikka (വരിക്ക) has slightly hard inner flesh when ripe, while the inner flesh of the ripe koozha  (കൂഴ) fruit is very soft and almost dissolving.

INGREDIENTS:

  • Ripe Jackfruit – 8 nos
  • All purpose flour – 1 and 1/2 cup
  • Brown or White Sugar – 1/2 cup
  • Baking powder – 1/2 tsp
  • Melted unsalted buter – 1 tbps
  • Milk – 1/2 cup

METHOD:

  • Grease a 16x9.5x4.5cm loaf pan with butter and keep it aside.
  • Clean jackfruits carefully by  remove the seeds covered in sockets. Also remove the creamy little clusters sticking on the fruits.
  • Chop cleaned jackfruits  into small pieces

  • Add chopped jackfruit pieces to a medium sized jar of you mixer and grind it well to get a puree. If needed, you can add 1/4 cup of water for grinding.
  • Preheat oven to 350 degree F.
  • In a medium sized mixing bowl sift together  flour and baking powder. Keep it aside.
  • In an another medium sized mixing bowl add butter and sugar and beat on medium to high speed for 30 seconds.
  • Now add  flour –baking powder mixture with sugar-butter mixture and and beat until  everything mix well.
  • Add milk or water alternately to the beaten mixture , beat on low speed until everything well combined.
  • Now add the jackfruit puree and mix just until incorporated.

  • Pour  batter to the prepared loaf  pan.
  • Bake in preheated oven for  30  to 40 minutes or until the top turns a golden brown and a tooth pick inserted into the center of the cake comes out clean.
  • Remove  your delicious jackfruit cake from the Oven.
  • Its very nice and mouth watering aroma wont allow you to wait for a long time. But allow the cake cool completely ( 15 minutes) before cutting and serving.
