Chicken Patties / Chicken Cutlets

INGREDIENTS:

  • Chicken breasts – 3 nos., cooked and minced
  • Maida / All purpose flour – 1/2 cup
  • Beaten egg – 1
  • Potato, large  – 1 no
  • Onion , finely chopped – 1, medium
  • Bell pepper , finely chopped – 1/4
  • Ginger – 2 inch piece
  • Garlic – 3 pods
  • Italian Style Bread Crumbs – 1 cup 
  • Dried red chilli flakes – 1 and 1/2 tsp.
  • Coriander powder – 1/2 tsp.
  • Black pepper powder – 1/2 tsp.
  • Garam masala – 1/2 tsp.
  • Cumin powder – 1/2 tsp.
  • Salt – to taste
  • Olive oil  for shallow fry or deep fry

METHOD:

  • Wash well  and cut the chicken breasts to small pieces.
  • Clean them well. Drain the water completely.
  • Place the chicken pieces in a pressure cooker and add 1/4 tsp. salt, 1/2 tsp. black pepper powder and 1 cup water. Mix everything well. Pressure cook it for 3 whistles. Allow them to cool down. Drain excess water (chicken broth). SunYou can reserve that chicken broth to make soup.
  • Now crumble the cooked and drained chicken with your fingers. Otherwise run the chicken pieces in a food processor or mixie for few seconds till it appears like crumbs. Do not over process. Empty in to a large bowl.
  • Wash well and peel the potato.
  • Pressure cook the potato by adding water until tender, allow it to cool and mash well.
  • Grind well ginger and garlic to get a fine paste. Keep it aside.
  • Heat 1 tsp. olive oil in a pan. When oil is hot, add chopped onion, chopped bell pepper, ginger garlic paste and sauté for 3 minutes on medium heat.
  • To this add dried red chilli flakes, coriander powder, Garam masala, cumin powder,  and 1/4 tsp. black pepper powder, salt, mix everything well and sauté for 2 minutes and remove  pan from the heat.
  • In a large bowl combine cooked and minced chicken, mashed potato, and sautéed onion masala mixture . Mix everything well with a spatula or clean hand.
  • Add 1/2 cup Maida / All purpose flour, 1/2 cup Italian Style Bread Crumbs and half of the beaten eggs to the bowl and mix well. Check for the salt.
  • Mix well the Chicken Patties mixture / Chicken Cutlets mixture  and divide them into equal sized balls.

    • Spread 1/2 cup Italian Style Bread Crumbs on a plate.
    • Flatten each chicken ball onto discs or oval shapes.
    • Now brush each Chicken Patties discs with beaten egg and immediately coat the Chicken Patties disc with bread crumbs generously. Repeat the same for all the Chicken Patties discs.

    • Arrange all the bread crumbs coated Chicken Patties discs / Chicken Cutlets discs in a large plate and refrigerate for 1 hour.
    • Heat enough oil in a pan for deep fry or shallow fry on medium heat and carefully place each Chicken Patties discs / Chicken Cutlets discs into the hot oil.
    • Fry each Chicken Patties till both sides become golden brown color.
    • Serve hot with tomato sauce or coriander chutney.
    • Otherwise prepare a burger by toasting the sliced bun, spread low fat butter and layer with lettuce leaves, onion, cucumber and tomato slices, followed by a cheese slice and the Chicken Patties / Chicken Cutlets.

    NOTE :

    Actually It was just an experimental  cooking, but it comes out great. It is really yummy, me and my husband really like it very much. If you need,  adjust seasoning and add or remove ingredients to suit personal taste. You can use 2, 3 thinly chopped green chilles instead of Dried red chilli flakes.
