SUGAR COOKIES


  • INGREDIENTS:

  1. All-purpose flour-2 cups
  2. Baking soda-1/2 tsp
  3. Baking powder-1/2 tsp
  4. Butter-1 cup
  5. Egg-1
  6. Sugar-1 cup
  7. Vanilla extract-1tsp
  8. Warm water - 1/4 cup

METHOD:
  1. Preheat oven to 350 degrees.
  2. Add all-purpose flour, sugar, baking powder, baking soda, egg, butter and vanilla extract in a mixing bowl.
  3. Combine the ingredients to make a dough. If need, add enough water or milk to make dough.  
  4. Take a small amount of cookie dough, shape it to a small ball.
  5. Flatten it and then shape with a cookie cutter or you can shape the cookie even with a glass.
  6. Arrange the cookie dough on an ungreased cookie sheets about 2 1/2 -inches apart.
  7. Bake 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Egg Masala


INGREDIENTS:-
  • Boiled Eggs -2 nos
  • Sliced Onions -1 no
  • Ginger-garlic paste -1 tsp
  • Curry leaves -1 string
  • Tomato sliced -1no
  • Salt – to taste
  • Oil- as needed 
  • Chilly Powder -1/2 tsp
  • Coriander powder -1/2 tsp
  • Egg Masala – 1 tsp (You can use Meat masala,Vegetable masala or  Garam masala)
METHOD:-
  • Heat oil in the pan.
  • Splutter mustard seeds and add Onion,Curry leaves in it.
  • Saute for few minutes and add ginger garlic paste.
  • Saute till onions turn brown.
  • Add the chilly powder, coriander powder and egg masala, salt and saute it again for few minutes.
  • Add tomato slices and mix well.
  • Heat it for 5 minutes,stirring in between.The gravy should be sauteed very well,until it is almost brown in color.
  • Add 1 cup of water and simmer for 5 more minutes.
  • Just before switching off add boiled eggs into it and stir well.

Naan



INGREDIENTS:
  • All-purpose flour-2 cups
  • Luke warm water-3/4 cup
  • Yeast-1tsp
  • Oil-2 Tbsp
  • Natural yogurt-2 Tbsp
  • Salt-1tsp
  • Sugar-1tsp
  • Baking powder-1/4 tsp
METHOD:
  • Mix yeast with warm water in a bowl and set aside. 
  • Sift flour and add salt, sugar and baking powder and mix together. 
  • Add yogurt and mix together, then add the yeast mixture and mix well. 
  • Form into a dough, by kneading on a floured surface.

  • Place dough back into bowl, and proof in a warm place. Drizzle some oil on top of the dough and cover with a cloth, for 4 hours or until dough rises well. 
  • Take the dough out and punch down the dough and mix well.Oil your hands well before that. Take some oil and flour in separate bowls. 
  • Oil your hands well, take a ball of dough and make a smooth ball. Divide the dough into 6 or 8 equal pieces.  
  • Dust the work station with flour and put the dough and press it down with your palm. 
  • Make a small round disc shape with the dough, you can either toss it between both palms or roll it. 
  • Heat a pan to the highest , once it's hot bring the heat down a little bit and grease the pan with  oil/butter.
  • Let cook for a minute and  flip over. Now also you can apply little butter in pan.
  • Continue the same process with rest of the dough.

Wheat puttu- best combination

INGREDIENTS:
  • Wheat flour-2cups
  • Coconut grated-1/2cup
  • Salt to taste
  • Warm water for mixing
METHOD
  • Dry roast the wheat flour for 1 min.
  • In a mixing bowl add  flour and salt,  mix it well.
  • Gradually sprinkle in the hot water and rub with your fingers till it form coarse crumbs.It should be slightly wet. 
  • Now take a puttu maker,first put two teaspoon of grated coconut in it,and add the flour mix and  then add another two teaspoon of coconut and the flour mix and top it with two teaspoon of coconut. Cover with the lid and cook till steam comes out.
  • Now slowly remove it by pushing the puttu maker with a spoon from the bottom.

CHERUPAYAR
INGREDIENTS:
Green Gram(cherupayar)-1 cup
Grated coconut–1/4cup
Mustard seeds -1/2tsp
Red chillies -2 nos
Curry leaves-a few
Coconut oil-1tbsp
Salt to taste
METHOD:
  • Heat oil in a pan or a kadai. 
  • Splutter mustard seeds and then add red chillies and curry leaves.
  • Add the green gram, grated coconut and mix well.
  • Cover the pan with a lid and cook on low flame for 5 mins. 
  • Remove the cover and mix well the whole contents again ans serve.

Celery-Carrot Thoran

INGREDIENTS:
  • Celery (chopped) - 4 sticks
  • Carrots (medium,chopped) - 2 nos
  • Onion (chopped) - 1 no
  • Green chillies (chopped) - 2 nos
  • Garlic paste - 1 tsp
  • Grated coconut - 1/4 cup
  • Turmeric powder - 1/4 tsp
  • Garam masala  - 1/2 tsp
  • Curry leaves - 1 stem
  • Mustard seeds - 1/2 tsp
  • Salt - As reqd
  • Oil - 2 tbsp

METHOD:
  • Grind together coconut,turmeric powder and garam masala into a coarse form.
  • Heat oil in a pan.
  • Splutter mustard seeds.
  • Add curry leaves.
  • Add the chopped ingredients and saute for 5 mins.
  • Add the ground coconut mixture and garlic paste  along with salt and saute.
  • Lower the flame and cover with a lid.
  • Cook for 5 mins.
  • Remove the lid and saute again.
