Easy Vegetable Korma

INGREDIENTS:
  • Frozen Mixed Vegetables (Green peas, Double beans, carrot, green beans,sweet corn) - 1 cup
  • Onion (chopped) - 1 medium
  • Potatoes - 1 medium (peeled, cubed)
  • Green chilly paste - 1tsp 
  • Ginger Garlic paste - 3/4 tsp
  • Turmeric powder - a pinch
  • Garam Masala - 1/4 tsp(optional)
  • Pepper powder - 1/4 tsp
  • Salt to taste
  • Oil/butter/Ghee - 2 tsp
  • Mustard seeds - 1/4 tsp
  • Coconut milk - 3/4 cup
  • Chopped coriander leaves - 2 tsp
  • Water as required
METHOD:
  • Wash and Cook the cubed potatoes with pinch of turmeric powder, enough salt and water in a pressure cooker or a pan.
  • Wash the frozen vegetables. 
  • Put the frozen veg in a bowl filled with boiling water and microwave on high for 10 minutes. 
  • Drain it and set aside. 
  • Meanwhile heat Oil/butter/Ghee in a pan and splutter mustard seeds. 
  • Fry onions over medium heat for 5 minutes until soft and lightly golden, then add Green chilly paste, Ginger Garlic paste,Pepper powder and Garam Masalar and cook for another 2 minutes.
  • Add the cooked frozen vegetables and cooked potatoes to the pan and mix well with onion and all the spices.Add enough salt. 
  • Now add the coconut milk and water and mix well.Cook on slow to medium flame without lid for 10 minutes or till you get the consistency of your choice. Garnish Vegetable Korma with chopped coriander leaves.
