INGREDIENTS:
- Olive oil - 3 Tbsp
- Onion, medium - 1 no
- Tomato (chopped)- 1 no
- Garlic (peeled and chopped) - 2 cloves
- Green chilly - 1 no
- Skinless Chicken Fillets - 400 gm
- Chopped fresh ginger - 2" piece
- Cumin powder - 14/ tsp
- Turmeric powder - 1/4 tsp
- Red chilly powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Garam masala - 1/2 tsp
- Meat masala - 1/4 tsp(optional)
- Salt - to taste
- Chopped coriander leaves - 2 tbsp(optional)
- Finely chop the medium sized onion and the green chilly.
- Chop the cleaned chicken to small or medium size pieces.
- Put the chopped tomato pieces to a mixer and mix well to get puree.
- Pour the tomato puree to a small bowl and keep it aside.
- Marinate the chicken pieces with 1/8 tsp of Turmeric powder, Garam masala, Meat masala and enough Salt. keep it aside for 15 minutes.
- Heat oil in a pan and fry the onion for 2 minutes.
- Now add chopped green chillies, crushed garlic cloves and ginger pieces and saute well.
- Add marinated chicken pieces to this and continue to fry for 5 to 6 minutes.
- Carry on frying gently over medium heat till everything is golden brown in color which will take 2 to 3 minutes.
- Keep stirring.
- Now add remaining turmeric powder, red chilly powder, coriander powder cumin powder and enough salt to the pan and stir well.
- Add the tomato puree and stir well.
- Cook till chicken is cooked completely.
- Garnish Stir fried Chicken Curry with Chopped coriander leaves.
- Serve hot with Rice, Roti or Appam.
