Avial–Kerala Style

INGREDIENTS:
  • Elephantyam (Chena) – 100 gm
  • Cucumber (Vellarika) – 1/4
  • Raw banana - 1/2
  • Drumstick – 1
  • Carrot - 1
  • Tomato - 1 (optional)
  • Snake gourd (Padavalanga) - 1/4
  • Salt As required
  • Coconut - 1/4 cup
  • Shallot  - 2
  • Green chilly - 2
  • Chilly powder -1/2 tsp
  • Turmeric powder -1/2 tsp
  • Cumin powder - 1/4 tsp
  • Curd - 2 tsp
  • Curry leaves -1 stem
  • Coconut oil  - 1 tsp

METHOD:
  • Wash all the vegetables and cut into 2 inch long pieces.
  • Add required water and salt and cook.
  • Ingredients to Grind:Coconut 1/4 cup , Shallot 2 , Green chilly 2 , Chilly powder 1/2 tsp , Turmeric powder 1/2 tsp, Cumin powder 1/4 tsp coarsely.
  • Add this to the cooked vegetables. 
  • When vegetables cooked properly add curd and curry leaves in it and mix well.
  • Then add coconut oil and remove from fire.
