Sweet potato is large, starchy, sweet-tasting, tuberous root. It is one of the most important food crops in tropical and subtropical countries, where both the roots and tender shoots are eaten as a vital source of nutrients.Orange-fleshed sweet potatoes is one of nature's unsurpassed sources of beta-carotene ( vitamin A equivalent nutrient). Sweet potatoes are rich in dietary fiber, vitamin C, complex carbohydrates, and vitamin B6. Pink, Yellow and Green varieties are also high in carotene.

- Heat oven to 400° F.
- Wash the potato lightly to remove dirt without breaking the skin then dry them with a paper towel.
- If you wish to eat the skin, you can coat the sweet potatoes with some butter or a vegetable oil.
- Wrap each sweet potato in foil.
- Place them on a baking tray and bake until tender, about 45-55 minutes or until a toothpick inserted in the center comes out clean.(depending on the size of the potato).
- Make a slit into the top of each sweet potatoes. Using a pot holder, press carefully on the ends to open up the sweet potato.
- If you want, you can mash each sweet potatoes by adding enough butter, salt, pepper, honey or other seasoning.
