INGREDIENTS:
- Boneless skinless Chicken Breasts – 1 no
- Salt – 1/4 tsp
- Parsley flakes – 1/4 tsp
- Onion powder – 1/4 tsp
- Black Pepper powder – 1/2 tsp
- Eggs, beaten – 1 no
- Bread Crumbs – 1 cup
- All purpose flour/Maida – 1 cup
- Clean the chicken breast well.
- Cut the chicken to small pieces. wash them well 2 , 3 times. Cut the chicken into small chunks so they will fit into the blender.
- Place the chicken pieces in a medium sized bowl, then add salt, black pepper, Onion powder and Parsley flakes to the chicken pieces. You can add any flavors at this stage. From spices to herbs, garlic, salt to parmesan cheese.
- Now take a jar of mixer/blender and add the chicken pieces in it.
- Pulse the chicken until roughly chopped. Make sure that everything blended well with the chicken. Once it is done, transfer the mixture into a bowl.
- Crack the egg into a bowl and beat it well.
COATING PREPARATION:
- Line up the chicken spices mix, the all purpose flour/maida, the egg and the breadcrumbs in the four bowls.
- Rub your hands with some flour to avoid them becoming too sticky. Then take some chicken mixture and roll it in the palm of your hands to create a smooth ball shape about the size of a ping pong ball.
NUGGETES COATING:
- Now take a ball shaped chicken piece (nugget) and roll it in the flour. When totally covered, roll it in the egg. Next, roll the nugget in the breadcrumbs and place it on a plate. Repeat the process with all the chicken balls.
- Gently press down on the nuggets with the flat side of a knife to form the perfect nugget shape.Actually I forgot to do that in this recipe.
- Meanwhile preheat your oven to 350 degree F.
- Place all of the well coated chicken nuggets on a lightly greased baking tray. If you want, you can sprinkle 1 Tbsp of bread crumb over chicken nuggets.
- Spray top of chicken nuggets with olive oil spray.
- Now place the baking tray in center of the preheated oven for 10 minutes, then remove from oven, flip chicken nuggets to opposite side and bake an additional 6 minutes.
- Serve Chicken Nuggets warm with ketchup, barbecue sauce or honey mustard for dipping, if desired.
ALTERNATE METHOD:
- Instead of baking, you can deep fry the chicken nuggets.
- For that, take a frying pan and pour a cup of vegetable oil in it.
- Heat the pan to medium heat, then the oil become hot but not smoking.
- Place the nuggets into the pan and cook gently on a low heat about 5 minutes turning them every few minutes so they don't burn.Once it is cooked well, place the nuggets on kitchen paper to drain any excess oil.
