എത്തയ്ക്കാപ്പം / Pazham Pori (പഴം പൊരി) / Ethaykka Appam / വാഴയ്ക്കാപ്പം is a signature tea time snack in Kerala.
Ingredients:
- Ripe Plantain / Nendrapazham/ Ethappazham – 1
- Gram flour/Chickpea flour /Besan flour– 3/4 cup
- Sugar – 2 Tbsp.
- Egg – 1 (optional)
- Baking Soda / Cooking Soda - 1/4 tsp.
- Cardamom Powder / Elakai podi – 1/2 tsp.
- Turmeric powder – 1 pinch (optional)
- Water as needed
- Coconut Oil for Deep Frying
Method:
- Take sugar and water in a bowl, mix well with a spoon, so the sugar is melted and beat egg until foamy.
- To this, add flour, baking soda, cardamom powder and pinch of turmeric powder and make it into a smooth thick batter.
- Heat the coconut oil in a pan for deep frying, until its all bubbly. You have to use coconut oil for the authentic taste.
- Now peel the super ripe banana and cut it into thick rounds. Dip it into the batter.
- When the oil is just short of smoking hot, add in the banana pieces coated with the batter in oil and fry till golden.
- Drain on paper napkins. Serve Pazham Pori (പഴം പൊരി) warm with tea.
