Here is the recipe of tasty Cheru payar Kovaykka Thoran / Red Gram Ivy gourd Stir Fry / ചെറു പയർ കോവയ്ക്ക തോരൻ
Ivy gourd also known as Tindora/Kovakkai/Thondekkai, is most commonly used as a natural remedy for diabetes
INGREDIENTS:
For seasoning
- Mustard seeds – 1/8 tsp.
- Curry leaves – 1 spring
- Coconut Oil – 1/2 tsp.
- Dried Red chilles, cut in to 2 pieces – 1 or 2
METHOD:
- Cook cherupayar in a pressure cooker with turmeric powder and water for 3 -4 whistle. Pressure cook green gram /cherupayar till it turns soft, but not mashed. Drain the water and keep aside.
- Wash the Ivy gourd (kovakka) very well & cut it into thin round slices. Cut those round pieces of Ivy gourd again to make it smaller pieces.
- Grind grated coconut, green chillies, garlic , 3 Dried red chillies or 1/2 tsp. Red Chilly powder, 1/2 tsp. Coriander powder to a coarse paste. Keep it aside.
- Heat oil in a non-stick pan or heavy bottomed kadai, splutter mustard seeds, add curry leaves, Dried Red chilles and then add finely Chopped Onion. Saute it until it onions become transparent.
- Now add Kovaykka (Tendli) to the pan, add salt, cover the pan and cook or 5 minutes in medium flame. Remove the lid and add the coconut mixture into the pan. Mix everything well. Allow it to cook for 5 more minutes. If necessary, sprinkle 3-4 tsp. of water to the pan ,Keep everything to the center and cook it covered, until the kovaykkas almost cooked and it runs dry. Make sure flame is not high.
- Now add the cooked green gram. Mix everything well . Cover and heat on low flame for another 2 minutes, stirring at regular intervals. Add pepper powder if you like. Check for the salt. Mix everything well.
