If you love chocolate, you'll love these delicious Cocoa powder muffins. Successful and delicious, soft, fluffy Muffin making depends on 3 important activities; measuring, mixing and baking.
Both Kids and Adult can enjoy these tasty Muffins. I made them with Unsweetened Cocoa powder. I love serving these whole wheat flour muffins as a Tea time snack.
INGREDIENTS:
- Whole Wheat flour – 2 cups
- Egg – 3 at room temperature
- Whole Milk – 1 cup + 2 Tbsp.
- Unsweetened Cocoa powder – 6 Tbsp.
- Sugar – 1 and 1/2 cup
- Baking Powder – 1 Tsp.
- Vanilla essence – 2 tsp.
- Oil – 1/2 cup
METHOD:
How to Bring Eggs to Room Temperature
Place eggs in a bowl and cover them with warm (not hot) tap water. Allow the eggs to sit in the water for about 5 minutes or until they are no longer cool to the touch.
- Preheat oven to 360 degree F .
- Grease a 12-cup nonstick muffin pan with butter and keep it aside.
- In a large mixing bowl, add eggs and beat well with a hand held electric mixer for about 2 minutes. Add sugar and beat well for 1 minute. Add milk, Oil and Vanilla essence and mix everything well.
- In a medium-sized mixing bowl, whisk together wheat flour, baking powder, salt and Cocoa powder.
- Add the wet ingredients to the dry ingredients, stirring to blend; there's no need to over -mix the batter. Just make sure that everything is well-combined. If you want , you can add chocolate chips; coat them with flour before mixing into the batter.
The dry and wet ingredients, respectively, can be mixed in advance, but as soon as the wet and dry ingredients have been combined with each other, the liquid will activate the baking powder and the batter needs to be baked right away.
- Scoop the batter into the prepared muffin pan (about 3/4 full).
Gently bang the muffin pan against the side of a counter and then tap the pan on a flat surface. This will release any air bubbles in the batter.
- Bake the muffins for 16 to 18 minutes, or until a cake tester inserted in the center of a muffin comes out clean. Remove the muffins from the oven, and after 5 minutes remove them from the pan, allowing them to cool for about 15 minutes on a wire rack.
- The Chocolate Muffins may be served hot or at room temperature.
Store Chocolate Muffins / Wheat Flour Cocoa powder Muffins in an airtight container in the fridge for 5 days. Freeze in a Ziploc bag for 3 months.
