Baked Sweet Potatoes

DSC07245DSC07250DSC07255DSC07257Sweet potato  is large, starchy, sweet-tasting, tuberous root. It is one of the most important food crops in tropical and subtropical countries, where both the roots and tender shoots are eaten as a vital source of nutrients.Orange-fleshed sweet potatoes is  one of nature's unsurpassed sources of beta-carotene ( vitamin A equivalent nutrient). Sweet potatoes are rich in dietary fiber, vitamin C, complex carbohydrates, and vitamin B6.  Pink, Yellow and Green varieties are also  high in carotene.

INGREDIENTS:
  • Sweet Potatoes, Medium Sized, Unpeeled – 5 nos
  • Unsalted butter – 5 tsp
  • Salt – To taste
  • Black Pepper – 1/2 tsp
  • Cinnamon sugar  - 2 Tbsp (optional)
  • METHOD:

    1. Heat oven to 400° F.
    2. Wash the potato lightly to remove dirt without breaking the skin then dry them with a paper towel.
    3. If you wish to eat the skin, you can coat the sweet potatoes with some butter or a vegetable oil.
    4. Wrap each sweet potato in foil.
    5. Place them on a baking tray  and bake until tender, about 45-55 minutes or until a toothpick inserted in the center comes out clean.(depending on the size of the potato).
    6. Make a slit into the top of each sweet potatoes. Using a pot holder, press carefully on the ends to open up the sweet potato.DSC07249DSC07250
    • Top them with  butter, sprinkle with salt, pepper, cinnamon sugar or other seasonings. DSC07253
    1. If you want, you can mash each sweet potatoes by adding enough butter, salt, pepper, honey or other seasoning.
