Eggnog Cookies

We can make many delicious desserts with  leftover eggnog. Eggnog cookies are Perfect for holidays and cookie exchange or cookie swap.

INGREDIENTS:

  • All purpose flour or Wheat flour – 3 cups
  • Eggnog – 1 and 1/2  cup
  • Baking powder – 1/2 tsp
  • Salt – 1/4 tsp
  • Unsalted butter, softened – 1/2 cup
  • Brown sugar or white Sugar – 3/4  cup
  • Vanilla essence – 1 tsp
  • Egg – 1 (optional)
  • Milk – 1/4 to 1/2 cup  ( you can use warm water  instead of milk )

This  soft and tasty Eggnog sweet Cookies  are quick and easy  to make. It's simply delicious.

METHOD:

  • Premeasure and layout all the ingredients in your work place to make EGGNOG COOKIES.
  • Line two  large rectangular baking trays with parchment paper. Keep it aside.
  • In a large bowl sift together all purpose flour, baking powder and salt. Keep it aside.
  • Using a  standing mixer fitted with the paddle attachment or with an electric hand-held mixer, beat butter at high speed until it is soft and smooth, about 30 seconds. (if you don’t have Standing mixer, place butter in a large bowl and mix well using a hand mixer )
  • Add sugar to the bowl and  beat well, at medium speed, until the mixture is light and fluffy. Scarp down the bowl with a large rubber spatula once or twice in between.
  • Now add the egg, beat in medium speed, only until well blended. Scrape down the bowl once or twice.
  • Add All purpose flour, Baking powder, and Salt and beat until the mixture is smooth. Total mixing time is 1 minutes. Do not overbeat.
  • Add and blend in the water/ milk and the vanilla essence.
  • Add 2, or 3 Tbsp of water or milk if necessary . The dough must be little bit thinner than chapathi dough consistency.
  • Turn out the dough onto lightly floured surface  and knead 5 to 8 times.
  • Preheat oven to 360 degree F.
  • Take a small amount of cookie dough. Roll out the dough to one  inch thickness. Repeat the same with remaining dough.Press down firmly from the top of each rolled dough with your palm to flatten it little bit.
  • Flatten it and then shape with a cookie cutter or you can shape the cookies even with a glass. I shaped these cookies simply using Cookie Press.
  • Place each of them 2” apart in the  baking  tray .
  • Bake them  for 20 minutes or or until the tops of the Eggnog Sweet Cookies look set and are just starting to turn golden brown.
  • Let your Soft Cookies to cool on the baking  tray for 5 –10 minutes until they can be transferred easy to racks.
  • Enjoy homemade Eggnog Cookies with hot Tea or Coffee.

Grape jam Button Cookies

INGREDIENTS:

  • All purpose flour – 1 and 1/2  cup
  • Sugar – 1/4  to 2/3 cup
  • Egg – 1 no
  • Butter, at room temperature – 1/2 cup
  • Vanilla essence – 1 tsp
  • Salt – 1/8 tsp
  • Grape  jam – 3 Tbsp

METHOD:

  • Premeasure and layout all the ingredients in your work place to make Grape jam Button Cookies.
  • Line a large rectangular baking tray with parchment paper. Keep it aside.
  • In a large bowl, with an electric mixer on medium speed beat butter and sugar until smooth.
  • Now add egg and vanilla and beat until well blended.
  • Stir in flour and salt and beat just until dough comes together. Keep blending until you have a uniform and crumbly mixture to obtain the cookie dough.
  • Turn out the dough onto a clean surface well-dusted with flour and roll out it with a rolling pin until you have flattened it out to a ¼-inch thick sheet.
  • Preheat oven to 350 degree F.
    • Use a 3-inch round cookie cutter to carve out cookies and place them on the buttered or parchment lined baking tray, maintaining a 3-inch gap between cookies. Gather up the scraps and roll it out again and do this until there is no dough left.
    • Make a slight indentation at the center of every cookie using the backside of a ¼ teaspoon measuring spoon, fill the indentation up with the grape jam. I filled the indentation after baking the cookies.

    • Bake your cookies  until lightly browned, about 15 - 20 minutes.  If  you are baking more than one baking tray at a time, switch baking tray positions halfway through baking.
    • Let cookies cool on baking tray  for 5 minutes, then use a wide spatula to transfer them to racks to cool completely.
    • Now you can spoon about 1/8 teaspoon grape  jam into the center of each cooled cookie.
    • Your Grape jam  Button cookies are ready to serve.

    Strawberry Buttons

    INGREDIENTS:

    • All purpose flour – 3/4 cup
    • Sugar – 4 Tbsp
    • Egg – 1 no
    • Butter, at room temperature – 4 Tbsp (1/4 cup)
    • Vanilla essence – 1/2 tsp
    • Salt – 1/8 tsp
    • Strawberry jam – 3 Tbsp

    METHOD:

    • Premeasure and layout all the ingredients in your work place to make Strawberry Buttons.
    • Line a large rectangular baking tray with parchment paper. Keep it aside.
    • Preheat oven to 350 degree F.
      • In a large bowl, with an electric mixer on medium speed beat butter and sugar until smooth.
      • Now add egg and vanilla and beat until well blended.
      • Stir in flour and salt and beat just until dough comes together.
      • Shape dough into 1 inch balls. Place  them about 1 inch apart on buttered or parchment lined baking tray. Press your thumb gently into the center of each cookie to make an indentation.

      • Bake Strawberry Buttons until lightly browned, about 20 minutes.  If  you are baking more than one baking tray at a time, switch baking tray positions halfway through baking.
      • Let cookies cool on baking tray  for 5 minutes, then use a wide spatula to transfer them to racks to cool completely.
      • Spoon about 1/4 teaspoon Strawberry jam into the center of each cooled cookie. Actually I put a scoop of  Strawberry jam in the center of each cookies, and baked them.
      • Your Strawberry Buttons are ready to serve.

      Cocoa Powder Cookies

      INGREDINETS :

      • Wheat flour – 1 and 1/4 cup
      • Cocoa powder – 1/4 cup
      • Butter, melted – 2 Tbsp
      • Baking powder – 1/4 tsp
      • Baking soda – 1/4 tsp
      • White or Brown Sugar – 1/2 cup  (In this recipe, I used brown sugar)
      • Water – 1 cup
      • Olive Oil – 3 Tbsp

      Cocoa Powder Cookies  (1)

      METHOD :

      • Premeasure and layout all the ingredients in your work place to make Chocolate Cookies.
      • Line a large rectangular baking tray with parchment paper. Keep it aside.
      • Preheat oven to 360 degree F.
      • Using a  standing mixer fitted with the paddle attachment or with an electric hand-held mixer, beat butter at high speed until it is soft and smooth, about 30 seconds. (if you don’t have Standing mixer, place butter in a large bowl and mix well using a hand mixer )
      • Add sugar to the bowl and  beat well, at medium speed, until the mixture is light and fluffy. Scarp down the bowl with a large rubber spatula once or twice in between.
      • Add  Wheat flour, Baking powder, Baking soda, cocoa powder  and beat until the mixture is smooth. Total mixing time is 1 minutes. Do not overbeat. You can also mix well with your clean hand.
      • Make a well in the center  of dry ingredients add milk/water  and mix well . I usually mix it well with hand. While mixing,apply little oil in your hand to prevent sticking dough in your hand.
      • Add 2 or 3 Tbsp of water if necessary . The dough must be little bit thinner than chapathi dough consistency.
      • Take a small amount of cookie dough.
      • Roll out the dough to one  inch thickness and press down firmly from the top of each rolled dough with your palm to flatten it little bit.
      • Flatten it and then shape with a cookie cutter or you can shape the cookies even with a glass. I shaped these cookies by hand.
      • Place each of them 2” apart in the  baking  tray .
      • Bake them  for 20 minutes or or until the tops of Cocoa Powder Cookies /Tea time Cookies look set and are just starting to turn golden brown. ( If you want, you can do egg wash before baking the cookies)
      • Let your soft Cookies to cool on the baking  tray for 5 minutes until they can be transferred easy to racks.

      Spicy Cookies

      Spicy Cookies  (1)

      INGREDIENTS:

      • Wheat flour – 2 and 1/2 cup
      • Baking powder – 1/2 tsp
      • Salt – 1/2 tsp
      • Brown sugar or white Sugar – 3 Tbsp
      • Garam masala – 1/2 tsp
      • Meat masala – 1/2 tsp
      • Ginger powder – 1/2 tsp
      • Cumin powder – 1/4 tsp
      • Unsalted butter, softened – 3 Tbsp
      • Egg – 1 no (optional)
      • Warm water – 1 and 1/2 cup ( you can use warm  milk   instead of water)

      METHOD:

      • Premeasure and layout all the ingredients in your work place to make SPICY Cookies.
      • Line a large rectangular baking tray with parchment paper. Keep it aside.
      • In a large bowl sift together Wheat flour, baking powder , Garam masala, Meat masala, Ginger powder, Cumin powder and salt. Keep it aside.
      • In an electric mixer, beat butter on medium to high speed for 30 seconds.
      • Add sugar  in it and beat until mix well.
      • Now add egg and  beat well.
      • Add flour-baking powder mixture to the electric mixer and mix everything well.
      • Make a well in the center  of dry ingredients add milk/water  and mix well. While mixing,apply little oil in your hand to prevent sticking dough in your hand.
      • Add 2, or 3 Tbsp of water if necessary . The dough must be little bit thinner than chapathi dough consistency.
      • Turn out the dough onto lightly floured surface  and knead 5 to 8 times.

      Cocoa-Wheat Sweet Cookies

      This  is soft and tasty  Cocoa Powder-Wheat flour  Cookies and is   quick and easy  to make. It's simply delicious.

      Cocoa Wheat Cookies (10)

      INGREDIENTS:

      • All purpose flour – 1 cup
      • Wheat flour – 1 and 1/2 cup
      • Unsweetened Cocoa powder – 1/2 cup
      • Baking powder – 1/2 tsp
      • Salt – 1/4 tsp
      • Unsalted butter, softened – 3 Tbsp
      • Brown sugar or white Sugar – 3/4  cup
      • Vanilla essence – 1 tsp
      • Egg – 1 no
      • Milk – 1 and 1/2 cup ( you can use warm water  instead of milk )

      Easy Oats Biscuits

      INGREDIENTS

      • All purpose flour – 1 cup
      • Oats – 1 cup
      • Baking powder –  1/2  tsp
      • Sugar – 3 or 4 Tbsp ( you can use brown sugar also)
      • Milk – 1/4 cup
      • Warm water – 1/4 cup
      • Oil – 3 Tbsp

      • Line a large rectangular baking tray with parchment paper. Keep it aside.
      • Place all purpose flour , oats, baking powder, and sugar in a large mixing bowl and mix well.
      • Make a well in the center  of dry ingredients add milk and mix well. While mixing,apply little oil in your hand to prevent sticking dough in your hand.
      • Add 2, or 3 Tbsp of water if necessary . The dough must be little bit thinner than chapathi dough consistency.
      • Turn out the dough onto lightly floured surface  and knead 5 to 8 times.

      • Serve Homemade Oats Biscuits with Tea or Coffee.

      Eggless Oats-Wheat flour Cookies

      INGREDIENTS:

      1. Wheat flour – 1 cup
      2. Oats flour – 1 cup
      3. Baking soda-1/4 tsp
      4. Baking powder-1/4 tsp
      5. Butter – 1/2 cup
      6. Sugar-1/2 cup
      7. Vanilla extract-1tsp
      8. Warm water - 1/2 cup

      METHOD:

      • Preheat oven to 350 degrees.
      • Add Wheat flour, Oats flour, sugar, baking powder, baking soda, ,butter and vanilla extract in a mixing bowl.
      • Combine the ingredients to make a dough. If need, add enoughwater or milk to make dough. 
      • Take a small amount of cookie dough, shape it to a small ball.

      • Flatten it and then shape with a cookie cutter or you can shape the cookie even with a glass. I used flower shaped cookie cutter.

      • Arrange the cookie dough on an ungreased cookie sheets about 2 1/2 -inches apart.
      • Bake 15 to 20 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

      Whipping Cream Biscuits

      INGREDIENTS:
      • All purpose flour – 1 +3/4 cup
      • Baking powder – 1 tsp
      • Salt – 1/4 tsp
      • Sugar – 2 Tbsp
      • Heavy whipping Cream – 2/3 cup/158 ml
      Whipping Cream Biscuits (2)
      METHOD
      • Preheat oven to 375 degree F.
      • Grease a baking sheet lightly and evenly with butter or oil and keep it aside.
      • In a large mixing bowl,mix all  ingredients together until dough forms a ball. While mixing, apply  little oil in your hand to prevent sticking dough in your hand.
      • Turn out the dough onto lightly floured surface  and knead 5 to 8 times.
      • Roll out the dough to half  inch thickness and cut biscuit shape with a 3 inch cutter.

      • Place each of them 2” apart on a  greased baking sheet.

      • Bake them  for 20 minutes or or until the tops of the biscuits  look set and are just starting to turn golden brown.
      • Let the Whipping Cream Biscuits cool on the baking sheet for 2 or 3 minutes until they can be transferred easy to racks. If you want , you can brush top of each biscuits with butter. 
      • Serve Homemade Whipping Cream Biscuits with Tea or Coffee.

      Chocolate Cookies

      There are endless variations to the simple Chocolate Cookie.This  soft and tasty chocolate cookies are quick and easy to prepare.

      INGREDIENTS:

      • All purpose flour – 1 cup
      • Cocoa powder, unsweetened – 1/3 cup
      • Sugar – 1 cup ( I used 1/2 cup)
      • Baking soda – 1/4 tsp
      • Baking powder – 1/4 tsp
      • Salt – 1/4 tsp
      • Butter, at room temperature – 3/4 stick/3 Ounce
      • Egg – 1
      • Vanilla essence – 1 tsp
      • Water – 1/4 cup
      • Walnuts, finely chopped – 1/2 cup

      METHOD

      • Grease a baking sheet lightly and evenly with butter or oil and keep it aside.
      • Preheat oven to 350 degrees.

      • Flatten each of them and then shape with a cookie cutter or you can shape the cookie even with a glass. I used oval and round shaped cookie cutter. Try to make them all the same thickness for even baking. chocolate cookies (6)
      • Arrange each of  them in your greased baking sheet about 2 1/2 -inches apart.
      • Bake for 15 to 20 minutes or until the tops of the cookies look set and are just starting to turn brown.
      • Let the cookies cool on the baking sheet for 2 or 3 minutes until they can be transferred easy to racks.

      Raisins Biscotti

    • Raisins – 1/2 cup
    • Granulated white sugar – 1/4 cup
    • Large Eggs – 2
    • Vanilla extract – 1 tsp
    • Baking powder – 1 tsp
    • Salt – 1/4 tsp
    • All-purpose flour – 1 and 3/4 cupsraisin Biscotti (1)

    • METHOD: Same as Almond Biscotti 

      • Preheat oven to 350 degrees F (180 degrees C).
      • In a large bowl , beat eggs using a hand mixer.
      • Beat well, and then, remove two tablespoons of egg for another use.
      • After you remove the two tablespoons of egg, add the sugar and vanilla to the bowl and beat on high speed until thick, pale, and fluffy (about 5 minutes). You can do this with normal wire egg beater also .
      • In a separate bowl, whisk together the flour, baking powder and salt.
      • Add this to the egg mixture and beat until combined.
      • The entire mixture came together quite quickly without much beating. Lastly add the Raisins.
      • Turn mixer on low speed to distribute raisins throughout the dough.
      • Remove the dough from the mixing bowl and divide it into Two.
      • Dip your fingertips in the remaining two tablespoon of egg and form Two logs about 2 inches wide by 11 or 12 inches long.
      • If the dough is quite sticky , use some flour to shape the dough.
      • Place the logs on a greased baking tray and bake for about 25 minutes or until firm to the touch.
      • Remove from oven and let cool on a wire rack for about 10 minutes.
      • Reduce oven temperature to 300 degrees F.
      • Transfer the log to a cutting board and cut into about 1/2 inch (1.25 cm) slices, on the diagonal.
      • Place the Raisins biscotti, cut side down, on the baking sheet.
      • Bake for about 8-10 minutes, turn slices over, and bake for another 8-10 minutes or until golden brown.
      • Remove from oven and let cool. raisin Biscotti (2)
      • Raisins  Biscotti is ready to serve with Hot Tea, Coffee or Milk.
      • You can store in an airtight container for up to a month.raisin Biscotti (4)
