INGREDINETS:
- Potatoes – 3 nos, medium
 - Onion (thinly sliced) – 1, big
 - Red Chilly powder – 1 Tbsp
 - Coriander Powder – 1 tsp
 - Cloves – 2 nos
 - Cinnamon powder – 1/4 tsp
 - Fennel Powder – 1/4 tsp
 - Ginger – 1” piece, crushed
 - Garlic – 2 pods, crushed
 - Chopped Coriander leaves – 1 Tbsp
 - Oil/butter – 1 tsp
 
METHOD:
- Preheat oven to 350 degree F.
 - Clean your potatoes well under running cold water using a stiff-bristled brush.
 - Dry them off with a paper towel. Rub the potatoes with olive oil, sprinkle them with salt and pepper, and prick them with the tines of a fork.
 - Wrap each of them separately with foil and place them on a baking sheet.
 - Cook the potatoes for 45-55 minutes.
 - Meanwhile slice onion.
 - Heat oil/butter in a heavy bottomed pan, add crushed ginger, garlic in it and sauté well.
 
- Now add sliced onion,1cup water and sauté well. Cook till onion become translucent.
 - Add Cloves, Cinnamon powder, Fennel Powder, coriander powder , salt and red chilli powder to this and mix well.
 - Remove the baked potatoes from oven , allow them to cool.
 
- carefully remove each potato skin place them in a large bowl or plate and mash well.
 - Add this mashed potatoes to onion -spices mix and mix well. Check for Salt.
 - Yummy mashed potato curry is ready to serve.
 - Garnish your mashed potato curry with chopped coriander leaves.
 - This is really thick , spicy potato curry. If you want, you can increase the curry consistency by adding warm water. It goes well with Chapatti, Naan, Appam and dosa.
