This Eggless Vanilla Cake /Eggless Sponge Cake is quick and easy to make with easily available ingredients. Not using eggs or butter in this cake recipe and that also making this cake preparation easy and time consuming as you do not need to beat the eggs or the butter. INGREDIENTS:
- All Purpose Flour – 2 and 1/2 cups
- Baking Powder – 2 tsp
- Baking Soda – 1 tsp
- Salt – 1/4 tsp
- Sugar – 2 tbsp
- Condensed Milk – 300ml
- Water – 1 cup
- Vinegar – 2 tbsp
- Vanilla Extract – 2 tbsp
- Melted Butter – 1/2 cup
METHOD:
- Preheat the oven at 350F/180C.
- Lightly grease a 9×13 inch round pan with some butter or oil and set aside.
- In a large bowl sift together the flour, baking powder, baking soda and salt.
- In another bowl, mix the condensed milk, butter, sugar, vanilla essence along with water. Stir well until combined.
- Now make a well in the center of the dry ingredients and Pour the wet ingredients into the dry ingredients and mix gently using a wire whisk. The batter should be of a dropping consistency.
- Pour the batter in the prepared pan and tap the pan firmly on the counter top a couple times to get rid of the air bubbles
- Bake for 10 minutes and then reduce the heat to 300F (150C) and bake for another 15-20 minutes or until the top turns a golden brown and a tooth pick inserted into the center of the cake comes out clean.
- Just brush the top of the cake with 1 tbsp milk, 10minutes before the baking time end to get a nice polishing glaze.
- Remove it from the Oven.
- Allow the cake cool completely ( 15 minutes) before cutting and serving.
